LAS CENIZAS

2016 

Harvest: Hand-harvested

Varietals: Tempranillo

Wine-making: Destemmed grapes partially uncrushed fermented in concrete tanks. 12 days of fermentation with gentle pump overs.

Ageing: 18 months in 225 litres oak barrels, new and before used, of French and american oak. The wine goes through malolactic fermentation in the barrels.
